Yersinia, the Great Unknown in Food Safety Analysis

In recent years, this gram-negative bacillus has been found among the top 5 causes of notification according to the EFSA, even despite underestimating the real number of cases, since its surveillance is not mandatory so it is executed passively.
Its emergency is worrying, given that currently its control is not contemplated in frequently contaminated products, especially considering that the most affected population is children.
