Listeria monocytogenes continues to be a headline-grabbing pathogen as it challenges our handling of both raw materials and factory sanitation. Evolving on an on-going basis, this pathogen maintains itself as a threat to food safety as it continues to test the ways we attempt to control it.
This seminar has been organised in response to renewed focus on the threat of Listeria monocytogenes on food safety following recent events. It will consist of speakers involved with the recent UK Listeria in sandwiches outbreak. This includes Prof. Saheer Gharbia from Public Health England (PHE) who will detail how whole genome sequencing was used to trace Listeria in sandwiches during the outbreak.
Additional speakers will cover:
- L. monocytogenes in frozen sweetcorn and other frozen fruit and vegetables
- root cause investigations
- food safety and sandwiches
- dealing with Listeria biofilms in the food factory, and
- hygiene in food manufacturing establishments
